DELICIOUS & EASY

Hi friends!! I have so many life updates. Life has been crazy busy over the last few months – all in a good way. Trying lots of new things, doing lots of new things, and keeping really busy. I’ll try to update you all soon, but for now, I’m mostly concerned with getting more content up on this blog!! Keep checking back for updates, fitness ideas, recipes, and more. I’ll keep this post short and sweet. I’ve been on the lookout for lots of new recipes and have been trying to get inspiration in different places. As much as I love to eat fresh produce and meats and cook everything from scratch, sometimes it’s just not possible. In order to help save on some cash and to save food overall, I’ve been looking to the frozen section lately for fruits, vegetables, and meats. In general, all of this tends to be quite a bit cheaper, and ultimately it lasts longer. While fresh is probably always preferred, it’s just not always feasible. We are busy students, professionals, athletes, friends, family members, and more. Taking on Whole30

Most of November and December was spent (like everyone else) eating, drinking, and being merry. This meant lots of drinks, tons of parties, and ALL OF THE FOOD in the world (and let me tell you – it was all delicious). I had so many great things take place over the last few months, including time with my family and friends. I will definitely say that I enjoyed every single cookie I put into my mouth, every single glass of wine I drank, and every meal I had. Come January, I definitely felt perhaps a little off my game. I wasn’t 100% on point all the time with tracking my macros, and I found myself being hungrier and hungrier with the macros I follow. I LOVE my ice cream (Halo Top WHAT’S UP), and I LOVE Walden Farms, but I also know that there is plenty out there that I can eat and put together that is fresh, nutritious, and from the earth. I realized that I wanted to challenge myself to eat more wholesome, nutritious foods, and less of the ice cream, pancakes, and protein bars I have been eating. Don’t get me wrong – there is absolutely nothing wrong with eating those things. We all deserve to have treats and enjoy the food we eat. The Sunday Ritual: Meal Prep

I have this thing I do every week that I like to call ‘The Sunday Ritual’. Many of us have things like this – maybe it’s getting up and going to church, maybe it’s going for a Sunday walk or to brunch. Mine happens to be grocery shopping and meal prepping. Usually, I absolutely love to do both. However, I will admit that there are times that they are a chore. When I’m tired or exhausted after having a busy weekend, the last thing I want to do is cook for 3-4 hours. But, it’s become a part of my weekly routine, and it is what helps me stay on track and prepared for the week. We are all incredibly busy with tons of commitments. We have full time jobs, we are full time students, we balance a social life with our friends, time with our families, activities with people from our jobs whether it be sports teams or leading a club – not to mention trying to fit in time at the gym! With so much going on, how is it even possible that we could eat healthy and make healthy choices? For me, with so much going on all the time, I’ve found that meal prepping can be LIFE CHANGING and TIME SAVING. I don’t have time every single night to cook a lunch for the next day. DILLA DILLA GREEK QUESADILLA

I’m always on the hunt for new recipes – anything I can get my hands on that tastes delicious! I found a recipe on skinnytaste.com that inspired me! I am super into Greek food, and really just all food in general! Quesadilla made of: 1 Flatout wrap 4 oz. ground chicken with salt, pepper, italian seasoning, and garlic powder Mediterranean Feta Cheese Crumbles Low fat shredded mozzarella cheese Spinach Grape Tomatoes Cucumbers Dill sauce made of: Fage 0% Greek Yogurt Garlic Powder Salt Pepper Dill Basil Oregano Water to consistency Cook the ground chicken in a pan until cooked all the way through. Assemble quesadilla (separate than dill sauce!) and cook in a pan, on a panini maker, or on a sandwich press. Mix dill sauce in separate cup and add to quesadilla. ENJOY…

Adventures with Halo Top

If you follow me on instagram (@life.by.kiki), by this point you know not only about my addiction to ice cream, but also about my addiction to HALO TOP. Now, if you haven’t tried Halo Top yet… now is the time to get off your couch, pick up your car keys, and drive over to your nearest Whole Foods store. If you don’t have a Whole Foods by you, I hear that they sell it at numerous other places (Wegmans? Kroger?) This stuff is.. ABSOLUTELY INCREDIBLE. An entire pint of vanilla (yes, I am plain, I love vanilla, whatever) is only 240 calories – including 24 grams of protein!! That, my friends, is a feat. I don’t know how this company does it, but they truly make a delicious product. My only qualm is that the pints are a little expensive, but I was lucky and they were on sale this week at Whole Foods. Usually, I will run in, and bring over a stack of somewhere between 6-8 pints to the express checkout line. The cashier usually thinks I am insane, but I tend to not really care because quite frankly, this stuff is delicious, and I get to eat it. I love to mix it with things, put things on it, or eat it plain. Let’s be honest though, the more chocolate or peanut butter you put on ice cream, the better. I will forever be a…
